“We will be opening in the winter of this year,” a representative of Lettuce Entertain You told What Now Chicago.

“Tre Dita is a nod to the thickness of a properly cut bistecca Fiorentina that the restaurant will be serving from its open-hearth wood-fired grill. The Tuscan steakhouse from Lettuce Entertain You Restaurants is in collaboration with award-winning Chef Evan Funke (Felix, Mother Wolf), marking his first restaurant outside of Los Angeles.”

“This is the second of the two-restaurant project from Lettuce Entertain You in the St. Regis Chicago, following the opening of the all-day Japanese restaurant Miru in May of 2023. The space, which along with the open-heart wood-fired grill will also feature a temperature-controlled pasta lab, will be designed by David Collins Studio,” they added.

The inception of Lettuce Entertain You Restaurants marked its first milestone with the opening of R.J. Grunts in 1971. This venture laid the foundation for a prolific partnership between Melman and Orzoff, who continued to craft innovative restaurant concepts together.

Fast forward more than five decades, and Lettuce remains a family-owned and operated organization. It has evolved into a culinary powerhouse, owning, managing, and licensing over 60 brands and 130 restaurants across a dozen states, as described by Lettuce Entertain You’s representative.
