While an official opening date for Seville has not yet been released, Seville will be atop the Hilton Canopy & Hilton Garden Inn, within the heart of The Loop. Described as an exquisite Mediterranean dining destination brought to life by renowned celebrity chef, hospitality developer, and TV personality, Fabio Viviani. This culinary masterpiece encapsulates the rustic charm of the Mediterranean while offering a refined dining experience that transcends the ordinary.

The establishment will boast a carefully curated menu that revolves around seasonally inspired creations, showcasing elevated renditions of his personal favorite dishes. Alongside this, Seville boasts an impressive array of award-winning wines and meticulously crafted cocktails.

The essence of Seville’s menu lies in its celebration of coastal flavors, harmoniously blended with housemade pasta and the allure of Neapolitan-style pizzas. Connoisseurs of fine spirits will find solace in the exquisite selection of barrel-select bourbons, while enthusiasts of the grape will be enthralled by the extensive and thoughtfully assembled wine list.

The restaurant’s ambiance will seamlessly combine elegance with approachability, achieved by offering a variety of seating options. From inviting booths that provide comfort and intimacy to casual bar seating that exudes a convivial vibe, and even an outdoor roof deck that allows guests to bask in the open air – Seville will encapsulate versatility, according to Seville’s website.
