Fabio Viviani, the Chicago chef behind local hot spots like Siena Tavern, Bar Siena, JARS and Prime & Provisions (and 30+ other restaurants nationwide), will open his newest concept later this year.

Slated to open in Fall 2023, Seville by Fabio Viviani will be a rustically refined Mediterranean restaurant and bar serving seasonally inspired dishes and Fabio Viviani favorites. Seafood will be at the heart of the Seville dining experience. From grilled octopus to flaky fish adorned with fragrant herbs, the Mediterranean Sea will be celebrated year-round. In addition to coastal dishes, guests can enjoy housemade pastas, salads, premium steaks, Neapolitan-style pizzas and more. The menu is designed to be shared.

Seville will have a wine program created by sommelier Fabrizio Di Rienzo. The remainder of the beverage menu will feature handcrafted cocktails, barrel-aged bourbons, premium spirits and a curated list of domestic and international beers.

Seville’s rooftop location (atop the new Hilton Canopy & Hilton Garden Inn in The Loop,) will provide guests with views of Chicago’s skyline. In addition to the windowed dining room, which offers skyline views from almost every table, Seville will also feature an outdoor bar and lounge area (management expects to use the outdoor space almost year-round with help from heaters and such.)
