Seville, the new Mediterranean restaurant & craft cocktail bar located atop The Canopy by Hilton Chicago – Central Loop, will officially open its doors on Saturday, January 6th at 8:30 pm.

The concept was created in partnership with Fabio Viviani Hospitality. Helmed by Fabio Viviani, FVH is one of the leading hospitality groups in the United States with over 30 food & beverage concepts around the country.

Seville is an intimate Mediterranean restaurant and craft cocktail bar that serves coastal dishes and signature favorites created by Chef Fabio. Ownership of Seville, which is named for the capital of Andalusia in Spain, selected January 6th to celebrate the restaurant’s grand opening due to the significance in Spanish culture. Known as Día de Los Reyes (also known as Three Kings Day or “Little Christmas,”) the 6th of January is a beautiful, country-wide celebration that includes gifts, bountiful feasts and colorful parades.

While the menu at Seville will change with the seasons, the flavors and fresh ingredients of the regions touched by the Mediterranean Sea will be celebrated year-round. The menu is designed to be shared. Highlights from the opening menu will include:

Jamon & Cheese Croquettes – Roasted Garlic & Bravas Aioli

Tableside Smoked Beef Tartare – Shallot, Capers, Egg Yolk, Giardiniera Aioli

Grilled Octopus – Fingerling Potatoes, Nduja, Shaved Shallot & Celery, Olive Oil

Paella Style Risotto – Clams, Mussels, Shrimp, Chorizo, Chicken, Saffron

Seville has an extensive Mediterranean and American wine program, created by sommelier Fabrizio Di Rienzo. The remainder of the beverage menu features handcrafted cocktails, barrel-aged spirits, premium Bourbon, Whiskeys and Tequilas and a curated list of small batch craft beers.

Seville’s rooftop location provides guests with views of Chicago’s skyline. The 5,900 square foot windowed dining room offers city views from almost every table thanks to its 16th floor location. Seville also features an expansive 1,700 square foot outdoor bar and lounge area (management expects to use the outdoor space almost year-round with help from heaters and such.)

To bring this new concept to life, the Fabio Viviani Hospitality partnered with Phoenix Development Partners.

Seville is located at 243 S Franklin St, Chicago, IL 60606. The restaurant & bar will open with starting hours 3:00 pm from Monday – Sunday.
