According to a recent article from Block Club Chicago, Runaway Cow has its eyes on opening a location in Bridgeport at 608 W 31st Street.
A representative of Runaway Cow was not immediately available for commentary upon What Now Chicago’s request.
According to the article, the folks behind Runaway Cow are “eyeing an early May opening, but they still need the last bit of funding.”
“Alison Eichhorn’s passion for ice cream goes back generations. Her family owned the town Dairy Queen in suburban Lansing for about 50 years, so she knows good ice cream. Now, Eichhorn and her partner, Aaron Gutierrez — both vegans — are determined to show South Siders that plant-based ice cream can look and taste like the approachable, nostalgic frozen treats from their childhood, and it doesn’t just have to be for vegans.”
“The restaurant will serve chocolate-dipped soft serve cones, malt milkshakes, candy-filled “snowstorms,” ice cream cakes, and more — all made with plant-based alternatives. They’ll also have a grill for vegan burgers, hot dogs, and more.”
“Eichhorn and Gutierrez are eyeing an early May opening, but they still need the last bit of funding. They launched a Kickstarter campaign earlier this year with a goal of $30,000, and it’s raised a little over $20,000 as of Friday.”
“The bulk of the money is earmarked for a soft serve-dispensing machine that would pressurize the ice cream so it could withstand being held upside down — a hallmark of the soft serve Eichhorn grew up slinging at Dairy Queen.”
“Over the past few years, all the pieces required to make Runaway Cow a brick-and-mortar operation finally lined up, Eichhorn and Gutierrez said. Eichhorn and Gutierrez said they hope Runaway Cow can be a Chicago destination spot for vegans, but also a neighborhood staple business.”
