BIBIBOP Asian Grill, the Asian fusion fast food restaurant that focuses on serving healthy and affordable Asian food, is opening a new location in Vernon Hills, located at 700 E. Townline Rd.

The new location will move into the former home of Qdoba Mexican Eats on the perimeter of Hawthorn Mall around October 2022. The free-standing building southeast of the mall will have another unknown tenant moving into a two-tenant building that also once housed a Verizon store. The build-a-bowl chain was founded in 2013 under Charley Shin. He has since expanded the restaurant across several states, with the majority in Ohio and two locations in Chicagoland.

BIBIBOP Asian Grill takes pride in serving real, unprocessed, high-quality food, believing that well-being can start with a good meal. The highlight of their menu comes from their build-your-own bowls, starting with the base. Guests can add various toppings, protein, and sauce. They take care of everything they do to keep that meal affordable for their guests because they also believe that you should not have to pay more to eat healthy food. 

“I have a fond memory of a friend inviting me to breakfast, and I remember his mom serving me an egg over rice – a luxury at the time,” Shins says on the company’s website. “His family had extended generosity beyond their means. They welcomed me into their home and served me the best food they had. BIBIBOP grew out of a dream to serve others, serve our community and serve you. Our brand was founded on “strengthening our neighbor” – to me, that means giving guests our very best, just as my friend’s family served me.”
