According to a recent job posting, Industry Ales will open its doors in the Chicago Loop at 230 S Wabash Ave.

A representative of Industry Ales was not immediately available for commentary upon What Now Chicago’s request.

While an official opening date has yet to be confirmed, Industry Ale’s mission statement aims to blend the love for craft beer, culinary innovation, and a shared sense of community.

Industry Ales Brewpub, a collaborative project by industry veterans Matt Wiegers and Dan Rook, alongside executive chef Alexander Willis, will be located right next to Central Camera Company. Drawing from their wealth of experience, with a brewery at its core, the establishment will offer an array of beers—ranging from imaginative concoctions inspired by classic cocktails and culinary delights to cherished traditional styles that beer enthusiasts hold dear.

Spanning three expansive levels within a sprawling 12,000+ square foot area, Industry is designed to offer a multifaceted experience. Guests can expect to explore the beer and dining hall, a captivating mezzanine level, and a spacious lower level that houses the brewery itself, along with private dining spaces and additional seating arrangements. The establishment will accommodate up to 160 guests at a time, inviting them to indulge in a carefully crafted all-day menu featuring a contemporary twist on classic Chicago-inspired shared plates.

Dan Rook, a Certified Cicerone, stands as a pivotal partner in this endeavor, leading the way as Director of Food & Beverage. With seven years of bartending and cocktail program direction experience, including the opening and revitalization of several Kimpton Hotel & Restaurant Group properties, Rook’s expertise lends a unique flavor to the brewpub’s offerings. Recognized as “Best Bartender” by Chicago Tribune’s Redeye and hailed as a “30 under 30 Culinary Game Changer” by Zagat, Rook brings a wealth of creativity and knowledge to the table.

Matt Wiegers, the partner overseeing operations as Director of Operations, brings a diverse background to the project. Following a decade in retail management, Wiegers transitioned to hospitality as a consultant for restaurant openings and spirit and beer brands. With a recent five-year tenure as lead bartender at Elephant & Castle, where he played a pivotal role in conceptualizing cocktail menus for the brand on a national scale, Wiegers is primed to ensure the operational excellence of Industry Ales Brewpub.

Having honed his skills in a variety of renowned culinary destinations, Chef Alexander brings a unique and accomplished background to the table. His culinary journey boasts notable milestones, including time spent at MOTO by Homaro Cantu, where innovation and gastronomy collide to create unforgettable dining experiences. The seasoned chef also left his mark at Soul & Smoke and Hog & Hominy in Memphis, each renowned for their distinctive culinary perspectives and contributions, according to the company website.
