This will be one of two new concepts from G.O.O.D., according to a press release sent to What Now Chicago. “Two concepts, that couldn’t be further apart in theme, but share an unparalleled tie of outstanding service and “all are welcome” inclusive social atmospheres, will make their mark in Chicago in 2024, starting with the opening of The Pink Polo in the Spring, followed by Red River Dicks in the Summer.”

“If we’ve learned anything in the nearly seven years of operating The Delta, it’s that people in Chicago want to gather in a space that has good energy, an unpretentious environment, and tells a story that they can resonate with and want to share with friends,” says Eldridge Williams, co-founder, operating partner and creative director of G.O.O.D Pineapple in the press release.

“We’re not reinventing the restaurant industry with these concepts, but we are planning to leave a significant impression, as The Pink Polo will be a social hotspot where you can take clients, kick back with friends, and have a damn good cocktail in a chic environment.”

“Located inside The Chicago Collection hotel at 312 W. Chestnut – formally Drop Shop Coffee, The Pink Polo will be a place to see and be seen in Chicago, functioning like a private social club, without the burden of a membership fee. A trendy workspace by day, patrons will be able to work, socialize, and enjoy a full coffee and traditional bar, as well as fresh pastries, artisanal sandwiches, salads, and more, on a first-come-first-served basis.”

“The space has been reimaged to also accommodate meetings, lectures, private events, and more – an ideal space for digital nomads, work-from-home professionals, and working client lunches that can seamlessly lead into happy hour.”

“During the evening however, The Pink Polo will transition into a lively cocktail lounge, offering an upscale craft cocktail experience and eclectic social atmosphere; making it an ideal way to wind down from the day, and amp up for the evening.”

“The craft cocktail program will feature an extensive classic cocktail list, as well as innovative signature cocktails meant to impress, not intimidate. Upscale American tavern-style food with South American influences, such as butter-poached ceviche and Peruvian nachos, will be available to snack on as well, but The Pink Polo’s draw will be the cocktails, social atmosphere, and lush design.”

“Walking into the space, guests will note the sophisticated balance of elegant industrial design, with cement floors, Persian rugs, and leather seating. Exposed brick and wood paneling will complement visible water and electrical pipes throughout the ceilings, as well as a mix of industrial and chic-modern lighting fixtures.”

“The custom, marble-tile bar, accented with leather trim, seating 10-12 comfortably, will be the backdrop of the custom bleacher seating area, which will seat 30-40. Additionally, a dining room space with banquette seating that will accommodate 50-60 people, and private rooms on the lower level that will host groups of more than 100 people comfortably, are sure to be go-to destinations for private events, intimate weddings, team-building activities, corporate meetings and more,” the press release adds.
