“The goal opening date is late spring or early summer 2024. We are a unique restaurant, where we are going to have a farm-to-table fine dining tasting menu. The dining room is an open kitchen where cooks do all the service for guests. We will change the menu daily to reflect the produce we receive from farmers daily,” owner and chef, Jacob “Jake” Potashnick, told What Now Chicago.
“I’m originally from Chicago but had moved away to Europe to work in fine dining kitchens. I have always known I wanted to come back and open a restaurant. Due to that, I came back in May of 2022 with the sole focus on working on this project. Prior, I was in Berlin for 4 years.”
“We are a restaurant driven by working directly with farmers and artisans. Feld will have custom ceramics, steak knives, etc., with everything possible made directly by the artisan. We work with farmers directly by going to the source, which is the whole idea behind Feld, and that’s what makes us special and different. By coming to Feld, you will be supporting the cutting out of middlemen and giving back directly to the creator from vegetables to a plate,” Potashnick added.
According to an article written in 2022 by the Chicago Eater, “Potashnick and his partner have bought the former WHISK/Tamale Guy Chicago space and plan extensive renovations for a 20-seat farm-to-table tasting menu destination.”
“The chef — who resembles a clean-cut version of Carmen Berzatto from The Bear (Carmy is also a well-traveled chef intent on returning home) — has high expectations. Potashnick feels a responsibility to give back to a city that gave him the type of life and privilege that enabled him to travel all seven continents,” the article states.
