According to a recent article from the Daily Herald, Fat Rosie’s Taco and Tequila Bar will be expanding to Rosemont at 5433 Park Place.

A Fat Rosie’s Taco and Tequila Bar representative was not immediately available for commentary upon What Now Chicago’s request.

According to the Daily Herald article, “Fat Rosie’s Taco & Tequila Bar plans to open this year in the Rosemont entertainment district space recently vacated by Park Tavern, officials said Monday.”

Fat Rosie’s website tells customers more about the company’s history: “On a trip to Mexico after opening his first couple of restaurants, Chef/Proprietor, Scott Harris met a wonderful old Agave farmer with a dedicated pet donkey. This man’s steadfast donkey had worked alongside him in the Agave fields for over 20 years!”

“While most people would disregard their work animals, the old man farmer treated Fat Rosie as part of the family. They had a rare and inseparable bond that had formed through many years of hard work, sweat, and tears.”

“Scott admired the love and care that this old man had for his trusted donkey. He admired it so much in fact, that one night after many shots of tequila he promised the old farmer he would one day open a tequila bar and name it after the beloved donkey, Fat Rosie.”

Alongside Fat Rosie’s, Scott is also behind numerous restaurants in the Chicago area with Scott Harris Hospitality. “Scott has helped found numerous successful restaurants throughout the prestigious Chicago culinary scene which have won him such awards as Chicago Restauranteur of the Year, Top 25 Restaurants in Chicago, and even a James Beard nomination.”

“His establishments have found the hitherto mythical crossroads where classy meets classic, expertly tight roping the paper-thin line between quality and affordability. Scott snowballed a single experiment in casual, authentic Italian fare into a wildly successful operation that now boasts locations across the country,” Scott Harris Hospitality’s website states.
