According to a recent article from the Daily Herald, Chef Fabio Viviani will open a new concept in Lake Zurich called Lago, located at 350 N Rand Rd.

A representative of Lago was not immediately available for commentary upon What Now Chicago’s request.

According to the article previously mentioned, Lago is slated to open early in January of this upcoming year.

Viviani has been working on the menu for Lago for approximately a year, co-founder of developer Miller Street Partners, Romeo Kapudija, said in the article. Describing the concept, Kapudija likened it to a Gibson-style restaurant but with a contemporary twist. The restaurant will offer a menu brimming with high-end craft cocktails, ensuring that patrons have a wide selection of beverages to complement their meals.

Adding a unique touch to the ambiance, Lago will host a live DJ on weekends. The music won’t be overpowering but will instead enhance the overall dining experience, allowing guests to enjoy their meals and conversations in a lively atmosphere.

His culinary voyage began with rigorous training in Italian and Mediterranean cuisines at esteemed hospitality schools. By the age of 27, Fabio was not only running a pair of nightclubs but also overseeing a constellation of five restaurants.

The year 2013 marked a significant collaboration as Fabio joined forces with DineAmic Hospitality, marking the launch of several restaurants in Chicago, including Siena Tavern, Bar Siena, Prime & Provisions, Builders Building, and BomboBar. He then expanded his influence by introducing additional Mercato by Fabio Viviani concepts across the nation.

Continuing his innovative journey in 2017, Fabio delved into the realm of casinos with Portico by Fabio Viviani, located in New York’s del Lago Resort & Casino. A partnership with Penn National Gaming soon followed, leading to the creation of The Eatery by Fabio Viviani, a thriving modern food and beer hall featured in four Hollywood Casino properties in the Northeast. The diverse culinary offerings included Mercato, The Classic, Zen Noodle, and Joe & Dough.

While he may have gained fame as a contestant on Bravo’s Top Chef in seasons 5 and 8, earning the coveted “Fan Favorite” title, Fabio’s influence extends far beyond the reality TV realm. He is a recurring guest on prominent national television shows like Good Morning America, The Rachael Ray Show, and numerous Food Network programs, including his triumph in Cutthroat Kitchen: All-Star Tournament, according to the company website.
