Chicago’s Cafe Sophie is getting ready to grow significantly in the next year and a half, with plans to open two locations in the Fulton Market.

The cafe, owned and operated by David Pisor and Daniel Perretta, has one location in Gold Coast at 847 N. State St. Now, Pisor tells What Now Chicago he plans to open two more Cafe Sophie locations in Fulton Market and one in Dallas, TX by the end of 2024. By then, the duo also hopes to open a new Etta in Evanston and at least two new concepts, according to Pisor. The European-inspired café and market made its debut last year, offering baked goods, wood-fired plates, and wine.

The cafe was inspired by a member of the owner’s family, Aunt Sophie, who always showed up with a bottle of wine, according to the company’s website. Aunt Sophie often shared tips on dining, entertaining, and cooking the perfect slow-roasted chicken with herbed potatoes. Now her spirit lives through Cafe Sophie, where customers can find various pastries and breakfast options in the morning, coffee and signature drinks throughout the day, and salads, soups, wood-fired pizzas, and sandwiches for lunch and dinner.

“Sophie is more than just a cafe and market, it’s a nod to slower times when folks valued the simple, most honest things; good food, drinks, and conversation shared with friends or family,” according to the company’s website. “In the correct setting, a perfectly pulled espresso or a plate of freshly cut salumi and a tasteful glass of wine have a big impact on your day.
