While the impetus for DIVAN is in its menu by Executive Chef Mike Sheerin, boasting American steakhouse classics with refined European influence, the 150-seat, multi-level space lends itself to mini-experiences that change and elevate with each visit. These experiences range from private sommelier-lead wine tastings in the cellar with a range of localized international wines, and seating near the live music stage, to late-night champagne service.
The space was designed around its original elements like exposed Chicago brick and a soaring bow-truss ceiling and skylight that enhance the mezzanine seating and private dining rooms. The various seating areas allow for dynamic culinary exploration, and Chef Sheerin’s menu includes tableside presentations and shareables conducive to lounge and live entertainment dining.
Chef Sheerin first honed his skills in New York throughout the kitchens of Lutéce, Atlas, and Jean-Georges before returning to his hometown of Chicago to become the first-ever chef de cuisine under Chef Paul Kahan at Michelin-starred Blackbird.
Divan is owned by a group of hospitality professionals led by James Brown, founder of multiple hospitality companies with concepts in Chicago and Austin; Gordon Hardin, former head maitre d’ at Maple & Ash Chicago who now heads the company’s VIP services; and Elizabeth Pena Brown, an owner and operator of successful nightclubs and restaurants.
