According to a recent article from Crain’s Chicago Business, a new Southern cuisine spot called Briny Swine will open soon at 2577 N Clark St in Lincoln Park.

A representative of Briny Swine was not immediately available for commentary upon What Now Chicago’s request.

According to the company website, Briny Swine aims to open its doors sometime in early 2024. Their Instagram biography section states this will be sometime in the spring.

“Brought to you from the owners of Edisto favorite, Ella & Ollie’s, The Briny Swine debuts under Executive Chef/Owner Brandon Rushing, Co-owner Katherine Rushing, and expert pitmaster Will Kalutz. Briny Swine is an homage to two Southern celebrations and pastimes, oyster roasts and pig pickings – events and cuisines with a strong sense of community and the ability to unite people.”

“The menu at Briny Swine guides diners through an assortment of locally sourced oysters and those from the Northwestern oyster beds of Rushing’s childhood, Southern sides, home-style desserts, craft cocktails, and local brews.”

“The Rushings’ first concept, Ella & Ollie’s, opened in Edisto in 2016 and has attracted guests from throughout the Lowcountry, being selected as a “Top 10 Diners’ Choice” Charleston restaurant by Open Table and named as Chef and Food Network Host Kardea Brown’s #1 Charleston restaurant. Briny Swine is the second concept from the husband and wife hospitality team.”

The website also offers four different menus for customers to view. These menus are a dinner menu, a lunch menu, a family-style menu, and a cocktail menu option.
