High-end Japanese restaurant Sushi By Bou, which specializes in serving a traditional omakase experience, is expanding to West Loop, located at 311 N. Morgan St.

The company’s fifth Chicago restaurant will move into the former home of City Mouse, which closed in 2020 during the pandemic. The Fulton Market property, which used to be the Ace Hotel Chicago, was initially expecting the Alinea Group to move into the restaurant space, but that attempt failed when Chicago suspended indoor dining during the pandemic. Now, Sushi By Bou will be moving into the space at an unknown time. Several representatives from the company were unable to provide What Now Chicago with more details.

This isn’t the only new location on the way. Sushi By Bou is in the process of opening two new sites in New York City, in Flatiron and Chelsea. The company will also open two new concepts in Miami: Bou Terrance and Sushi Suite. When the new Chicago Sushi By Bou opens, customers can expect delicious Japanese cuisine served as a 12-piece omakase. The restaurant will also have plenty of craft cocktails, an imported sake selection, and high-energy vibes that will make customers want to come early and stay late.

“Our chefs select the finest seasonal ingredients and guide you through a timed tasting of some of the highest quality sushi in the world,” according to the company’s website. “Using the finest quality fish in the world, our master sushi chefs craft a memorable and delicious meal using traditional edomae techniques.”
