Hogsalt Hospitality, the restaurant group founded by Brendan Sodikoff, has plans to bring its fast-casual burger restaurant, Small Cheval, to the Chicago suburbs. Small Cheval will open an outpost in the Village of Rosemont at 9421 W. Higgins Road. The village will construct a new building on the former site of Gene & George, which will house two additional fast-casual restaurants, a Stan’s Donuts & Coffee and another that has not yet been announced.

The village board announced a 10-year lease with Hogsalt on Monday, and the site will reportedly serve as a prototype for future Small Cheval locations. The newly constructed building will feature two drive-thru lanes, one of which will be dedicated to online pickup orders, and a retractable roof to accommodate indoor and outdoor dining.

“The Village of Rosemont is thrilled to add to its vibrant dining offerings with the opening of Hogsalt Hospitality’s Small Cheval in fall 2022,” shares a written statement released by the village board. “Rosemont will be the first suburban location for the popular Chicago burger establishment. Small Cheval will join Stan’s Donuts and a third dining partner to be announced as Rosemont welcomes the next generation of quick casual restaurants in the coming year.”

Small Cheval is the little sister concept to Hogsalt’s Au Cheval. The fast-casual burger joint offers a pared down menu of Au Cheval’s original. In addition to those famous burgers, you can indulge in shakes, shots, beer, and draft cocktails.
