Rakkan Raman is a popular ramen chain based out of Japan. Founded in 2014 in Tokyo by Ryohei Ito, Rakkan began as an intimate four-seater ramen bar. Dedicated to making simple ramen with masterful technique, Rakkan’s strict quality standards quickly earned serious acclaim from Tokyo diners, and soon the small restaurant began its mission of bringing its premium ramen to the world.
In 2017, Rakkan launched its first expansion into the US when it opened an outpost in Los Angeles. Today, the restaurant now boasts 6 different restaurants across the US, and a brand new outpost is currently being developed in Uptown Chicago. Moving into the space at 4926 N Broadway, the new location will be the first ever Rakkan Ramen to reach the Midwest. The new Rakkan will be operated by franchisee Kenny Lau, who also works as as a Certified Public Accountant.
Rakkan is especially well known for its emphasis on umami flavors. Made with entirely plant-based broth, Rakkan uses Dashi soup stock to enrich their broth with an extra rich, savory sensation. The entire Rakkan menu revolves around three central ingredients, soy, pink salt, and a fermented seasoning called Koji. Rakkan strongly emphasizes the use of fermented ingredients, believing them to be beneficial to your health as well as a fundamental aspect of the umami flavor profile. It is not clear at the moment when Rakkan will be open to the public, as they are still early into the permitting process.
