Parker Hospitality’s newest restaurant Costera Cocina Tulum — a restaurant drawing upon the melting pot of flavors and bohemian energy of Tulum —celebrated its grand opening on Oct. 4, 2023. Located in the center of Fulton Market District’s pedestrian thoroughfare at 850 W. Fulton Market, Costera Cocina Tulum transports guests to the Mexican vacation destination.

“From Nisos Prime, our new modern Mediterranean steakhouse, to The Hampton Social, Parker Hospitality specializes in transporting our guests to beautiful destinations — no passport required! Costera brings a piece of Tulum’s relaxed, yet energetic, bohemian ambiance to Chicago,” says Parker Hospitality Founder and CEO Brad Parker in a statement.

Costera’s menu is inspired by the coastal and Mayan cuisine of Tulum and incorporates land-and-sea principles with more traditional Mexican dishes. Curated by chef Rick Tramonto and Executive Chef Aldo Ayala, who wove his family’s long and rich history into the flavor-forward dishes, the Costera menu showcases bold flavors and bright, fresh ingredients with a selection of raw bar items, salads, tostadas, tacos, pastas, handhelds, and slow-cooked meats and fish. The cocktail program offers twists on traditional classics, served alongside meals or a la carte in the 20-seat bar. Costera offers a total of 243 seats, including indoor dining, the bar, and an 88-seat outdoor patio.

Inspired by his travels to Tulum, Brad Parker designed the interior elements of Costera, creating a space that brings the heartbeat and rustic elegance of Tulum to Chicago. Greenery, stone walkways, and organic materials, including rattan, woven seagrass, and a variety of natural textiles, fill the space, while lime-washed walls and custom rope artwork from Querétaro, México anchor the interior. Flexible furniture — think tables that transform into stools — offer a unique take on restaurant design.
