Parker Hospitality introduces modern Mediterranean steakhouse Nisos Prime, bar and eatery Prime Bar, and nightlife experience The Lounge (802 West Randolph Street), three distinctive dining and lounge experiences set in the heart of Chicago’s West Loop. Each space includes an elevated food and beverage program overseen by Chef Rick Tramonto, Parker Hospitality’s Food & Beverage Director, and all three will share Parker Hospitality’s distinctive warm and welcoming hospitality, set against a stunningly designed backdrop.

“Nisos Prime, Prime Bar, and The Lounge all expand on what Parker Hospitality does best — creating unforgettable experiences for our guests,” said Parker Hospitality Founder/CEO Brad Parker in a statement. “Each space is a destination in and of itself, but together, the three unite to create something truly exciting and special.”
Details about each space include:
● Prime Bar (opening August 16): Housed on the main floor and catering to a more casual crowd, the first-floor Mediterranean eatery complete with a wood fire grill and cocktail bar features Mediterranean classics. The Prime Bar menu includes a list of shareable starters, a selection of soups, salads, and handheld sandwiches, house made pastas and a fresh seafood selection, and the highest-quality prime beef. Highlights include an 8-ounce Filet and a 22-ounce Bone-In Ribeye (both served with roasted garlic, rosemary, and tallow butter) along with a Wood-Grilled Branzino (butterflied and served with escabeche and roasted red pepper sauce) and the Pappardelle Alla Portofino (brandy tomato cream, basil pesto) and Paccheri Lamb Ragu (truffled ricotta) . Stand-out starters include the Steak Tartare(Dijon mustard, pickled vegetables) and Truffle Arancini (harissa aioli, chive oil). Prime Bar will offer ample walk-in seating and happy hour specials Mondays through Fridays. Brunch will be available starting soon, five days a week, later in August.
Prime Bar’s exterior, 64-person seasonal patio offers alfresco dining, and inside or out, diners can discover an array of savory creations, spritzes and crafted cocktail concoctions.
Prime Bar will offer traditional cocktails like an Extra-Dry Martini and Gin and Tonic, along with an array of spritz cocktails, including the perennial favorite Aperol Spritz and creative twists on the popular sophisticated sippers like the Hugo (St. Germain Elderflower, Lemon and Sparkling Wine) and the Amalfi (Aperol, Pineapple, Lime and Sparkling Wine). The bar will also feature European takes on classic steakhouse cocktails like the Gatherings of a Nomad (Sweet Gwendoline French Gin, Aegean tonic) and Passport to France (Broker’s Gin, lemon, bubbles). The wine list will include a variety of interesting bottles from the Mediterranean, as well as the Pacific Coast.
● The Lounge (opening August 18): Located on the second level, the hidden cocktail lounge (hint: look for the bookshelf) is a tucked-away, 2,000-square-foot room. This party space offers nightly DJs (Fridays and Saturdays), table experiences, and a unique craft cocktail program. When not operating as a nightlife destination, The Lounge is available for private events and dinner parties.
● Nisos Prime (opening November 2023): Nisos Prime will offer steaks and craft cocktails. The menu — curated by Tramonto along with the culinary team at Nisos Prime — celebrates the intersection of land and sea, prime-steak, and Mediterranean culinary heritage. Quality cuts of meats and whole roasted fish are infused with spices and flavors and paired with an extensive wine program.
