Permits were filed with the the city of Chicago by Footman Hospitality for a new build-out on 938 West Fulton Market according to partner, Peter Vestinos. Vestinos was unable to comment on the name of the new bar.
Along with being a partner in Footman’s new project, Vestinos is a spirit specialist and nationally known bartender. He launched BarMedic in 2012 as a consulting company for bars to assist bars in creating quality cocktails and training up quality bartenders.
What Now Chicago spoke with Vestinos about the project on Friday. He shared that this is a whole new concept for Footman Hospitality. The new addition to Footman’s eight bars will differ from Emporium, the existing Footman outpost in Fulton Market.
Vestinos shared the idea of the space is to, “Maintain the transportive and transformative cocktails of Sparrow.” Vestinos is a partner and the director at Sparrow.
According to permitting information, the new space will house a bar and lounge setup. Footman’s full scope of the project is currently unknown for this two-story masonry building as Peter shared that they are too early in the permitting process. “We are very early in the process so there is no telling at this point, it depends on the permits.”
This new addition for the Chicago based hospitality group will be offering a full cocktail list, with a flare and excitement behind them. The menu is yet to be disclosed as Vestinos said “There is a lot behind the creative process and because it is so early things can change.”
Jason Freiman, the other partner in the project was unavailable for comment when contacted by What Now Chicago on Wednesday.
Footman Hospitality is known for being a prominent figure in Chicago’s bar scene, they are behind eight concept bars including Emporium, Spilt Milk and Little Victories.
