“It was really just perfect timing,” Becca Grothe shared over a phone interview with What Now Chicago on Wednesday afternoon, regarding her soon to open eatery TriBecca’s Sandwich Shop. A friend and the previous tenant at 2949 W. Belmont Avenue approached Grothe’s husband, looking for someone to take over his lease. The location appealed, and once Grothe saw it, everything fell into place. “It’s the perfect size for what we want to do,” Grothe added, not to mention just down the street from the popular Honey Butter Fried Chicken, where Grothe has been working.

Grothe started TriBecca’s Sandwich Shop as a pop-up about three years ago. The shop has become popular for items like the signature Cubano; the craveable Crunchy Cauliflower sandwich; and the Spicy Tuna Melt, not to mention bowls of crinkle cut fries.

Eater Chicago reports the shop will also carry Illinois cult favorite, The Horseshoe, or a sandwich comprised of those crinkle cut fries served over a horseshoe-shaped slice of ham on toast, slathered with a hot cheese-based sauce known as Welsh rarebit.

In addition to a line-up of flavor-forward sandwiches, Grothe confirmed the plan to sell Tubers Donuts out of her shop. Tubers Donuts is the creation of her husband and fellow Honey Butter alum, Cam Waron. Well, ‘potato-nuts’ we should say. Tubers Donuts are made with potato starch instead of flour and come in varietals like Lemon Pepper Poppyseed, Hunch Bar Donut, Fries in Your Frosty, and the potential, and quite intriguing/outrageous, Buffalo Fried Chicken Donut.

Grothe says she expects to open sometime next month, so you’ll have wait just a little longer to sink your teeth into that BLT Croissant. In the meantime, you can always hop on social media to see what Grothe and Waron are working on.
