A brand new vegan-friendly taqueria called Don Bucio Taqueria, also known as DBT, is making its debut in Logan Square, located at 2763 N. Milwaukee Ave.

This will be the third restaurant from James Beard Award-nominated chef Rodolfo Cuadros, who is also behind Bloom Plant Based Kitchen and Amaru. The new restaurant will have space for about 90 people and is expected to open towards the end of November 2022. Although the menu isn’t going to be completely vegan, Cuadros says the new restaurant will serve as “a humble Mexican restaurant that just happens to serve vegan food,” according to Eater Chicago.
When the new restaurant opens at the end of next month, customers can expect vibrant colors and plenty of music that will showcase the different Latin cultures, such as cumbia. As for the menu, DBT will likely have about six tacos, including a vegan al pastor. While the final menu isn’t officialized, customers can expect fresh ingredients within every dish. Finally, a full liquor license will allow the restaurant to serve various margaritas.
Cuadros, who was nominated for Best Chef: Great Lakes, opened Bloom Plant Based Kitchen in 2021, following the launch of his Bucktown restaurant Amaru. The chef made it through the pandemic by operating Bloom out of Amaru. The pivot proved to be a massive success for Cuadros. Now, the award-nominated chef is getting ready to open Don Bucio Taqueria, which was named after a kitchen prep worker that Cuadros has worked with for several years.
