Judson and Moore is a new distillery that is scheduled to arrive at 3057 N Rockwell St later this Spring. As part of Rockwell on the River’s artisanal destinations, the distillery will be joining some of the neighborhood’s finest coffee roasteries and breweries, adding yet another jewel to Rockwell’s already impressive portfolio.
Judson and Moore was founded by Collin Moore and his wife back in 2018. Hobbyist distillers turned professionals, Collin and his wife have been hard at work for years learning to master the subtle intricacies of whiskey distillation and are finally preparing to share their expertise with the rest of the world. Described as a family-owned upstart craft distillery, Judson and Moore is helping to democratize the industry by producing world-class, small-batch spirits.
The team has been working hard for over a year now to launch their new project. Opening up on the repurposed grounds of a former tannery in a renovated masonry and heavy timber facility, the upstart distillery will feature its own distilling area, a work room, and an explosion-proof vault for barrel storage.
Inching ever closer to their expected Spring 2022 launch, Judson and Moore has just finished filing its liquor licenses. The first license is for the distillery’s designated taproom, where guests will be able enjoy Judson and Moore’s finely crafted varietals as well as sample upcoming batches. If you’re not too crazy about whiskey though, the bar will be also able to serve you specialty cocktails made with premium Judson and Moore spirits. The second license is for the operation of an outdoor patio, where guests will be able to unwind with their drinks on the bank of the Chicago River’s north branch.
