In Good Spirits is opening its doors as a brand new non-alcoholic bar, bottle shop, and community space, coming to Chicago’s West Town neighborhood.

After months of pop-ups, co-owners Adriana Gaspar and Hector Diaz are preparing to open a new brick-and-mortar. The two have started a Kickstarter to open a non-alcoholic bottle shop and bar experience in the area in Summer 2023. Owners hope to raise $11,000 to build out custom shelving, indoor seating, a room divider, overhead light fixtures, decorations, and inventory. The space will be a perfect destination for anyone who wants to go out for a drink without having to drink.
“We started In Good Spirits almost a year ago in May 2022, with a focus on creating space for social gatherings and celebrations that decenter alcohol, while retaining all the fun,” according to the company’s social media announcement. “It’s been an incredibly fulfilling experience for us so far, and we want to continue this mission with a permanent space for all things non-alcoholic shopping and socialization.”
Since opening almost a year ago, the woman-owned and Latino-owned endeavor has hosted successful non-alcoholic bar experiences at the Chicago Athletic Association at Cindy’s Rooftop, Soho House Chicago, Michelin Star Awarded restaurant Esme, Google HQ, and more. The success of their pop-up events has been great encouragement for the company’s next step in the journey.
“Our intentions from the get-go have been to create a welcoming and inclusive environment for those who abstain from alcohol and those who partake in drinking,” according to the company’s Kickstarter. “We always look forward to meeting people who are on a sobriety journey, but also those who are just interested in ways they can be more mindful of their drinking in their day-to-day lives.”
