A brand new restaurant called Haute Brats will be making its debut in West Englewood, located at 6239 S. Ashland Ave.

The restaurant, owned by South Side Chef Darryl Fuery, is set to open for takeout in a few weeks, followed by a grand opening in August 2022, according to Block Club Chicago. When Haute Brats opens, customers can expect a rotating menu backed by a core menu of sausages and french fries. On top of offering something new every day, Fuery hopes to use this new restaurant to give young chefs a chance to learn from a fast-paced restaurant through his Teaching N Training L3C program.

“My program will give them the basic experience of learning to work in the kitchen, learning the language of the kitchen, without the pressure of knowing recipes,” Fuery tells Block Club Chicago. “I’d rather teach people and give them the confidence to be able to go out and start their own career as opposed to being disillusioned of what the food service industry is and only lasting a year or two.” 

Feury plans to recruit these young chefs through community organizations such as Teamwork Englewood and the Greater Englewood Development Corporation. They will learn different cooking techniques while using high-quality ingredients sourced from local farms in Englewood. On top of learning culinary techniques like how to cut an onion and work on a time frame, they will learn how to cook various dishes such as spinach lasagna and jerk chicken tacos.

As for the restaurant, a playful menu schedule has already been planned. The restaurant will feature sandwiches on Monday, tacos on Tuesday, pasta on Wednesday, soul food on Thursday, fish, and seafood on Friday, and pizza on Saturday. Before the grand opening, the takeout restaurant will serve “hot dawgs,” crispy loaded fries, fresh elotes, homemade doughnuts, and bratwurst. Vegan and vegetarian options will also be available.

“I want to bring a people into Englewood and change the narrative about it being a violent area as opposed to where people can always come and get good food regularly,” Fuery continues. “But most importantly, I want the neighbors to come out to support us and our chefs.”
