Gibsons Restaurant Group, the group behind Chicago spots like LuxBar and Bar Mar, is working toward a deal to lease 15,000 square feet in the yet-to-be constructed development coming to 917 W. Fulton Market, reports Crain’s Chicago Business.

According to the publication, the restaurant will likely debut in spring 2024, once the development from real estate firm Fulton Street Companies is complete. The Permit Review committee approved plans for the mixed-use development in July 2021.
Gibsons Restaurant Group Chairman Steve Lombardo did not share details regarding the new concept with Crain’s, but he did say he has been angling to open a project in Fulton Market for years. Fulton Street co-founder Alex Najem told Crain’s the concept will likely be a bar and grill of some kind.
Construction on the 530,000 square-foot, 11-story building is set to begin this summer, according to Najem. The structure will house a variety of retailers and office space.
Gibsons Restaurant Group was founded in 1989 with Rush Street’s Gibsons Bar & Steakhouse. Today, the group operates 11 concepts, including Blue Star Bar, a virtual kitchen serving burgers, wings, ribs, sandwiches, and fries. Eater Chicago reported last year that the group has plans for national expansion.
