The new location, the 24th in Illinois, will open on June 14, 2022, according to the company’s website. Parent company Pandya Restaurant Growth Brands will keep things in-house, as they will replace a Boston Market, which they also own, for this new location. Pandya, a multi-brand operator, owned by real estate investor Jignesh “Jay” Pandya, purchased Corner Bakery and Boston Market back in late 2020 and has since expanded the brand throughout the country. Corner Bakery also has a location heading to Los Angeles a couple coming to Pennsylvania.

It’s a full circle for Corner Bakery, founded in 1991 by Chicago-based restaurant group Lettuce Entertain You Enterprises. The small neighborhood bakery started on a corner in downtown Chicago, focusing on creating artisan breads and freshly baked sweets. Since then, Corner Bakery has undergone several ownership changes before finally landing with Pandya. Despite the multiple changes in ownership, the brand continues to serve a menu full of ingredient-inspired, prepared-to-order food in over 190 locations nationwide.

“I am delighted to be a part of Corner Bakery, an outstanding restaurant chain with a superb, high-quality menu,” Pandya said in 2020 after originally partnering with the company. “Our acquisition of Corner Bakery aligns with what we believe families are seeking – high-quality kitchen crafted food and good, consistent customer service. I look forward to working with and being a resource for the more than 3400 Corner Bakery team members, and expanding this genuinely great brand.”
