Founded in 1995, Burrito Beach underwent something of a renaissance back in 2015, when its founder Greg Schulson opened a new, more modern location of the chain at Northwestern Memorial Hospital’s Feinberg Pavilion. The restaurant now has six open outposts, including one at O’Hare Airport.
Burrito Beach serves salads, rice bowls, tacos and burritos made in front of customers in a customizable, build-it-yourself format, with a small menu devoted to vegan items. In addition to lunch and dinner, the restaurant also offers breakfast at some locations, serving breakfast burritos, tacos or “quesa-zillas” with sides like griddled potatoes. It also offers catering and, at some restaurants, family-sized taco, nacho or salad bowl kits.
This is a developing story. What Now has reached out to Burrito Beach and will update this article with more information.
